  • Coconut aminos - 3 tablespoons
  • Fish sauce - 1 tablespoon
  • Garlic - 3 cloves, minced
  • Shallots - 2, sliced
  • Red chili - 1, sliced (optional)
  • Black pepper - 1 teaspoon
  • Ginger - 1 teaspoon, grated
  • Coconut oil - 1 tablespoon
  • Green onions - 2, chopped
  • Fresh cilantro - 2 tablespoons, chopped
  • Lime juice - 1 tablespoon

Steps

  1. Rinse the catfish fillets under cold water and pat them dry with paper towels.
  2. In a mixing bowl, combine coconut aminos, fish sauce, minced garlic, sliced shallots, black pepper, grated ginger, and lime juice. Mix well to create a marinade.
  3. Add the catfish fillets to the marinade, ensuring they are well-coated. Let them marinate for 15 minutes.
  4. Heat coconut oil in a clay pot or a non-stick skillet over medium heat. Add sliced red chili (if using) and sauté for 1 minute until fragrant.
  5. Place the marinated catfish fillets in the pot, along with the marinade. Cook for about 8-10 minutes, gently flipping the fish halfway through, until cooked through and the sauce has thickened.
  6. Once cooked, remove from heat and garnish with chopped green onions and cilantro. Serve hot with steamed vegetables or cauliflower rice.
