- Red chili - 1, sliced (optional)
- Black pepper - 1 teaspoon
- Ginger - 1 teaspoon, grated
- Coconut oil - 1 tablespoon
- Green onions - 2, chopped
- Fresh cilantro - 2 tablespoons, chopped
- Lime juice - 1 tablespoon
Steps
- Rinse the catfish fillets under cold water and pat them dry with paper towels.
- In a mixing bowl, combine coconut aminos, fish sauce, minced garlic, sliced shallots, black pepper, grated ginger, and lime juice. Mix well to create a marinade.
- Add the catfish fillets to the marinade, ensuring they are well-coated. Let them marinate for 15 minutes.
- Heat coconut oil in a clay pot or a non-stick skillet over medium heat. Add sliced red chili (if using) and sauté for 1 minute until fragrant.
- Place the marinated catfish fillets in the pot, along with the marinade. Cook for about 8-10 minutes, gently flipping the fish halfway through, until cooked through and the sauce has thickened.
- Once cooked, remove from heat and garnish with chopped green onions and cilantro. Serve hot with steamed vegetables or cauliflower rice.
