Steps

  1. Preheat the grill to medium-high heat.
  2. Clean and scale the snakehead fish, then make diagonal cuts on both sides to help it cook evenly.
  3. In a bowl, mix together the lemongrass, garlic, shallots, fish sauce, salt, black pepper, turmeric powder, and vegetable oil to create a marinade.
  4. Coat the fish thoroughly with the marinade and let it marinate for at least 20 minutes.
  5. While the fish is marinating, prepare the banana leaves by briefly passing them over an open flame or steaming them to make them pliable.
  6. Wrap the marinated fish tightly in the banana leaves, ensuring it is sealed well.
  7. Place the wrapped fish on the grill and cook for about 30 minutes, turning halfway through, until the fish is cooked through and has a smoky aroma.
  8. Once cooked, carefully unwrap the fish and serve it hot with fresh herbs and steamed rice.
