  • Shallots - 2, finely chopped
  • Lemongrass - 1 stalk, finely chopped
  • Chili - 1, sliced (adjust to taste)
  • Vegetable oil - 1 tablespoon
  • Fresh herbs (mint, coriander) - 20 grams each, for garnish
  • Lime - 1, cut into wedges
  • Salt - to taste

Steps

  1. Clean and gut the snakehead fish, then pat dry with paper towels.
  2. In a bowl, mix the fermented soy sauce, minced garlic, chopped shallots, chopped lemongrass, sliced chili, and vegetable oil to create a marinade.
  3. Coat the fish thoroughly with the marinade, ensuring it is well covered. Allow it to marinate for at least 15 minutes.
  4. Preheat your grill or grill pan over medium heat.
  5. Place the marinated fish on the grill and cook for about 5-7 minutes on each side, or until the fish is cooked through and has nice grill marks.
  6. Once cooked, remove the fish from the grill and let it rest for a few minutes.
  7. Serve the grilled fish garnished with fresh herbs and lime wedges on the side.
