- Lime - 1, cut into wedges

Steps
- Clean and gut the snakehead fish, then pat dry with paper towels.
- In a bowl, mix the fermented soy sauce, minced garlic, chopped shallots, chopped lemongrass, sliced chili, and vegetable oil to create a marinade.
- Coat the fish thoroughly with the marinade, ensuring it is well covered. Allow it to marinate for at least 15 minutes.
- Preheat your grill or grill pan over medium heat.
- Place the marinated fish on the grill and cook for about 5-7 minutes on each side, or until the fish is cooked through and has nice grill marks.
