  • Black pepper - 1/2 teaspoon
  • Vegetable oil - 1 tablespoon
  • Fresh coriander - 1/4 cup, chopped
  • Lettuce leaves - for serving
  • Fresh chili - 1, sliced (optional)

Steps

  1. Clean and gut the snakehead fish, then pat it dry with paper towels.
  2. In a bowl, combine minced garlic, fish sauce, lime juice, sugar, black pepper, and vegetable oil to create the marinade.
  3. Place the fish in a shallow dish and pour the marinade over it, ensuring the fish is well-coated. Let it marinate for at least 15 minutes.
  4. Preheat a grill or grill pan over medium-high heat.
  5. Grill the marinated fish for about 6-8 minutes on each side, or until the fish is cooked through and has a nice char.
