Ingredients

  • Snakehead fish (Cá Lóc) - 400 grams
  • Lemongrass - 2 stalks, finely chopped
  • Garlic - 3 cloves, minced
  • Shallots - 2, finely chopped
  • Turmeric powder - 1 teaspoon
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Vegetable oil - 1 tablespoon
  • Fresh herbs (mint, cilantro, and basil) - 1 cup mixed
  • Cucumber - 1, sliced
  • Rice vermicelli - 100 grams
  • Mắm Nêm (fermented fish sauce) - 3 tablespoons
  • Lime juice - 1 tablespoon
  • Sugar - 1 teaspoon
  • Chili - 1, finely chopped (optional)

Steps

  1. Preheat your grill to medium-high heat.
  2. In a bowl, mix the chopped lemongrass, minced garlic, shallots, turmeric powder, salt, black pepper, and vegetable oil to create a marinade.
  3. Clean the snakehead fish and make several diagonal cuts on both sides. Rub the marinade all over the fish, ensuring it seeps into the cuts. Let it marinate for at least 15 minutes.
  4. While the fish is marinating, cook the rice vermicelli according to package instructions. Drain and set aside.
  5. Prepare the Mắm Nêm sauce by mixing the fermented fish sauce, lime juice, sugar, and chopped chili in a small bowl. Adjust to taste.
  6. Place the marinated fish on the grill and cook for about 6-8 minutes on each side, or until the fish is cooked through and has nice grill marks.
  7. Once cooked, remove the fish from the grill and let it rest for a few minutes.
  8. Serve the grilled fish on a plate with fresh herbs, sliced cucumber, rice vermicelli, and the Mắm Nêm sauce on the side.
