Ingredients

  • Snakehead fish - 400 grams
  • Fish sauce - 3 tablespoons
  • Lemon juice - 2 tablespoons
  • Garlic - 3 cloves, minced
  • Shallots - 2, finely chopped
  • Sugar - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Fresh herbs (cilantro, mint) - 1/4 cup, chopped
  • Vegetable oil - 1 tablespoon
  • Red chili - 1, sliced (optional for heat)

Steps

  1. Clean and gut the snakehead fish, then pat it dry with paper towels.
  2. In a bowl, mix the fish sauce, lemon juice, minced garlic, chopped shallots, sugar, black pepper, and vegetable oil to create the marinade.
  3. Place the fish in a shallow dish and pour the marinade over it, making sure to coat the fish evenly. Let it marinate for at least 15 minutes.
  4. Preheat your grill or grill pan over medium heat.
  5. Place the marinated fish on the grill and cook for about 5-7 minutes on each side, or until the fish is fully cooked and has nice grill marks.
  6. Once cooked, remove the fish from the grill and let it rest for a couple of minutes.
  7. Garnish with fresh herbs and sliced red chili before serving.
