- Snakehead fish - 400 grams
- Fish sauce - 3 tablespoons

- Garlic - 3 cloves, minced
- Shallots - 2, finely chopped
- Sugar - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Fresh herbs (cilantro, mint) - 1/4 cup, chopped
- Vegetable oil - 1 tablespoon
- Red chili - 1, sliced (optional for heat)
Steps
- Clean and gut the snakehead fish, then pat it dry with paper towels.
- In a bowl, mix the fish sauce, lemon juice, minced garlic, chopped shallots, sugar, black pepper, and vegetable oil to create the marinade.
- Place the fish in a shallow dish and pour the marinade over it, making sure to coat the fish evenly. Let it marinate for at least 15 minutes.
- Preheat your grill or grill pan over medium heat.
- Place the marinated fish on the grill and cook for about 5-7 minutes on each side, or until the fish is fully cooked and has nice grill marks.
- Once cooked, remove the fish from the grill and let it rest for a couple of minutes.
- Garnish with fresh herbs and sliced red chili before serving.
