Ingredients

  • Snakehead fish - 400 grams
  • Scallions - 50 grams
  • Vegetable oil - 2 tablespoons
  • Garlic - 2 cloves
  • Lime - 1 unit
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Fresh herbs (cilantro, mint) - for garnish

Steps

  1. Preheat your grill to medium-high heat.
  2. Clean the snakehead fish thoroughly and make 3 diagonal cuts on each side for better flavor absorption.
  3. In a bowl, mix salt, black pepper, and juice from half a lime. Rub this mixture all over the fish, including inside the cuts.
  4. Chop the scallions and garlic finely and mix them with vegetable oil in a small pan. Heat over low heat until the scallions are tender and fragrant, about 2-3 minutes.
  5. Place the fish on the grill and cook for about 6-8 minutes on each side, or until the fish is cooked through and has nice grill marks.
