Ingredients

  • Snakehead fish (Cá lóc) - 300 grams
  • Lotus leaves - 2 large leaves
  • Lemongrass - 2 stalks, finely chopped
  • Garlic - 3 cloves, minced
  • Shallots - 2, finely sliced
  • Turmeric powder - 1 teaspoon
  • Fish sauce - 2 tablespoons
  • Lime juice - 1 tablespoon
  • Black pepper - 1/2 teaspoon
  • Fresh coriander - 2 tablespoons, chopped
  • Chili (optional) - 1, finely chopped
  • Vegetable oil - 1 tablespoon

Steps

  1. Clean the snakehead fish and cut it into fillets. Pat dry with paper towels.
  2. In a bowl, combine lemongrass, garlic, shallots, turmeric powder, fish sauce, lime juice, black pepper, and chopped chili. Mix well to create the marinade.
  3. Add the fish fillets to the marinade, ensuring they are well-coated. Cover and let marinate in the refrigerator for at least 20 minutes.
  4. While the fish is marinating, prepare the lotus leaves by rinsing them under cold water. Soak them in hot water for 5 minutes until they become pliable.
  5. Preheat the grill to medium heat.
  6. Take one lotus leaf and place a marinated fish fillet in the center. Sprinkle with fresh coriander and fold the leaf around the fish to create a sealed packet. Repeat with the second fillet.
  7. Brush the outside of the lotus leaf packets with vegetable oil to prevent sticking.
  8. Place the lotus leaf packets on the grill and cook for about 10-12 minutes on each side, or until the fish is cooked through and flakes easily.
  9. Carefully unwrap the lotus leaves and serve the fish with steamed rice and a side of fresh vegetables.
