Ingredients

  • Snakehead fish (Cá lóc) - 300 grams
  • Ginger leaves - 6 large leaves

  • Shallots - 2, finely chopped
  • Fresh turmeric - 1 teaspoon, grated
  • Lemongrass - 1 stalk, finely chopped
  • Fish sauce - 2 tablespoons
  • Lime juice - 1 tablespoon
  • Black pepper - 1/2 teaspoon
  • Salt - 1/2 teaspoon
  • Vegetable oil - 1 tablespoon

Steps

  1. Clean and fillet the snakehead fish, removing bones and skin. Cut the fillets into 2-3 pieces.
  2. In a bowl, combine minced garlic, chopped shallots, grated turmeric, chopped lemongrass, fish sauce, lime juice, black pepper, and salt to create a marinade.
  3. Add the fish pieces to the marinade, ensuring they are well coated. Let it marinate for at least 15 minutes.
  4. While the fish is marinating, preheat your grill or oven to medium-high heat.
  5. Once marinated, take a ginger leaf and place a piece of fish on it. Wrap the leaf securely around the fish, securing with toothpicks if necessary.
  6. Repeat this process for all fish pieces.
  7. Brush the wrapped fish with vegetable oil to prevent sticking.
  8. Place the wrapped fish on the grill or in the oven and cook for about 10-15 minutes, or until the fish is cooked through and flaky.
  9. Remove from heat and let it cool for a few minutes before serving.
  10. Serve warm with fresh lime wedges and a side of steamed rice or fresh herbs.
