Steps

  1. Preheat the grill to medium heat.
  2. Clean the snakehead fish thoroughly and pat dry with paper towels.
  3. In a mixing bowl, combine minced garlic, shallots, lemongrass, fish sauce, lime juice, ground black pepper, and salt to create a marinade.
  4. Marinate the fish in the mixture for at least 30 minutes to enhance flavor.
  5. While the fish is marinating, prepare the banana leaves by briefly passing them over an open flame to make them pliable.
  6. Once marinated, place the fish on a piece of banana leaf and sprinkle chopped cilantro and sliced chili peppers on top.
  7. Wrap the banana leaf around the fish securely, ensuring no openings for the juices to escape.
  8. Brush the outside of the banana leaf package lightly with vegetable oil.
  9. Place the wrapped fish on the grill and cook for about 15-20 minutes, turning occasionally until the fish is cooked through and flaky.
