Steps
- Heat the cooking oil in a large pan over medium heat.
- Add the minced garlic, sliced shallots, and grated ginger to the pan, sautéing until fragrant.
- Add the catfish fillets to the pan, cooking for about 3-4 minutes on each side until they start to brown.
- In a small bowl, mix the fish sauce, soy sauce, black pepper, brown sugar, and water together.
- Pour the sauce mixture over the catfish in the pan, bringing it to a simmer.
- Cover and let it braise for about 15 minutes, occasionally spooning the sauce over the fish.
- Once the catfish is cooked through and the sauce has thickened slightly, remove from heat.
- Garnish with chopped spring onions and fresh coriander before serving.
