  • Ginger - 1 teaspoon, grated
  • Brown sugar - 1 teaspoon
  • Cooking oil - 1 tablespoon
  • Spring onions - 2, chopped
  • Fresh coriander - a handful, for garnish
  • Water - 200 ml

Steps

  1. Heat the cooking oil in a large pan over medium heat.
  2. Add the minced garlic, sliced shallots, and grated ginger to the pan, sautéing until fragrant.
  3. Add the catfish fillets to the pan, cooking for about 3-4 minutes on each side until they start to brown.
  4. In a small bowl, mix the fish sauce, soy sauce, black pepper, brown sugar, and water together.
  5. Pour the sauce mixture over the catfish in the pan, bringing it to a simmer.
  6. Cover and let it braise for about 15 minutes, occasionally spooning the sauce over the fish.
  7. Once the catfish is cooked through and the sauce has thickened slightly, remove from heat.
  8. Garnish with chopped spring onions and fresh coriander before serving.
