Ingredients

  • Snakehead fish - 400 grams
  • Lager beer - 200 ml
  • Garlic - 3 cloves, minced
  • Ginger - 1 tablespoon, sliced
  • Lemongrass - 1 stalk, bruised and cut into segments
  • Fresh cilantro - 20 grams, chopped
  • Fresh dill - 20 grams, chopped
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Chili - 1, sliced (optional for heat)
  • Lime - 1, cut into wedges for serving

Steps

  1. Clean the snakehead fish thoroughly and make shallow diagonal cuts on both sides for better flavor infusion.
  2. In a bowl, combine minced garlic, sliced ginger, salt, black pepper, and beer. Mix well to create a marinade.
  3. Place the fish in the marinade, ensuring it is well-coated, and let it marinate for at least 15 minutes.
  4. Prepare a steaming setup using a pot with water and a steamer basket or a plate on top of a heatproof dish.
  5. Layer the bottom of the steamer with lemongrass segments and half of the chopped cilantro and dill.
  6. Place the marinated fish on top of the herbs in the steamer, and then add the remaining herbs and sliced chili on top.
  7. Cover the steamer and bring the water to a boil, then steam the fish for 15-20 minutes until cooked through.
  8. Once cooked, carefully remove the fish from the steamer and transfer it to a serving plate.
  9. Serve hot with lime wedges on the side for squeezing over the fish before eating.
