- Snakehead fish fillet - 300 grams
- Garlic - 2 cloves, minced
- Shallots - 1 medium, finely chopped
- Lemongrass - 1 stalk, finely chopped
- Fish sauce - 1 tablespoon
- Coconut flour - 2 tablespoons
- Egg - 1 large
- Black pepper - 1/2 teaspoon
- Cilantro - 2 tablespoons, chopped
- Mint leaves - 10 leaves, chopped
- Lettuce leaves - 4 large
- Cucumber - 1 small, sliced
- Lime - 1, cut into wedges
- Chili sauce - for serving (optional)
Steps
- In a food processor, combine the snakehead fish, minced garlic, chopped shallots, lemongrass, fish sauce, coconut flour, egg, black pepper, cilantro, and mint. Pulse until well blended but slightly chunky.
- Form the mixture into 2 equal-sized patties.
- Heat a grill or non-stick skillet over medium heat and add a little oil. Cook the patties for about 5-7 minutes on each side or until golden brown and cooked through.
- To assemble the burgers, place each patty on a large lettuce leaf, add cucumber slices, and garnish with additional mint and cilantro. Squeeze lime juice over the top.
- Serve with chili sauce on the side, if desired.
