- Ginger - 1 tablespoon, julienned
- Fish sauce - 1 teaspoon
- Coconut oil - 2 tablespoons
- Water - 200 milliliters
- Green onions - 2, chopped (for garnish)
Steps
- Heat the coconut oil in a medium-sized pan over medium heat. Add the minced garlic and sliced shallots, sautéing until fragrant and translucent, about 2-3 minutes.
- Add the ginger and continue to sauté for another minute.
- In a bowl, mix together the coconut aminos, coconut sugar, black pepper, fish sauce, and water. Stir until the sugar dissolves.
- Place the mackerel fillets in the pan, then pour the sauce over the fish, making sure they are well coated.
- Bring the mixture to a gentle simmer, cover the pan, and let it cook for about 15-20 minutes, occasionally spooning the sauce over the fish to keep it moist.
- Once the fish is cooked through and the sauce has thickened, remove from heat. Serve hot, garnished with chopped green onions.
