- Catfish fillets - 300 grams
- Fish sauce - 3 tablespoons
- Coconut aminos - 2 tablespoons
- Black pepper - 1 teaspoon
- Garlic, minced - 2 cloves
- Shallots, sliced - 1 medium
- Fresh ginger, sliced - 1 inch
- Red chili, sliced - 1 (optional)
- Water - 150 ml
- Coconut oil - 1 tablespoon
- Green onions, chopped - 2 tablespoons for garnish
Steps
- Heat coconut oil in a clay pot or heavy skillet over medium heat.
- Add minced garlic, sliced shallots, and ginger to the pot, sauté until fragrant.
- Add the catfish fillets to the pot, cooking for about 2-3 minutes on each side until lightly browned.
- Pour in the fish sauce, coconut aminos, black pepper, and water, making sure the fish is well coated.
- Add sliced red chili if using, cover the pot, and let it simmer for 15-20 minutes on low heat.
- Check occasionally, adding more water if necessary to keep the sauce from becoming too thick.
- Once the fish is cooked through and the sauce is rich and caramelized, remove from heat.
- Garnish with chopped green onions before serving.
