Ingredients

  • Catfish fillets - 300 grams
  • Fish sauce - 3 tablespoons
  • Coconut aminos - 2 tablespoons
  • Black pepper - 1 teaspoon
  • Garlic, minced - 2 cloves
  • Shallots, sliced - 1 medium
  • Fresh ginger, sliced - 1 inch
  • Red chili, sliced - 1 (optional)
  • Water - 150 ml
  • Coconut oil - 1 tablespoon
  • Green onions, chopped - 2 tablespoons for garnish

Steps

  1. Heat coconut oil in a clay pot or heavy skillet over medium heat.
  2. Add minced garlic, sliced shallots, and ginger to the pot, sauté until fragrant.
  3. Add the catfish fillets to the pot, cooking for about 2-3 minutes on each side until lightly browned.
  4. Pour in the fish sauce, coconut aminos, black pepper, and water, making sure the fish is well coated.
  5. Add sliced red chili if using, cover the pot, and let it simmer for 15-20 minutes on low heat.
  6. Check occasionally, adding more water if necessary to keep the sauce from becoming too thick.
  7. Once the fish is cooked through and the sauce is rich and caramelized, remove from heat.
  8. Garnish with chopped green onions before serving.
