- Soy sauce - 2 tablespoons
- Fish sauce (Halal) - 1 tablespoon
- Sugar - 1 tablespoon
- Black pepper - 1/2 teaspoon
- Chili pepper - 1, sliced (optional)
- Vegetable oil - 1 tablespoon
- Green onions - 2, chopped for garnish
Steps
- Rinse the fish under cold water and pat dry with a paper towel. Cut into 2-3 large pieces.
- In a bowl, mix the turmeric powder, soy sauce, fish sauce, sugar, black pepper, and coconut water to create the marinade.
- Add the fish pieces to the marinade, ensuring they are well coated. Let it marinate for at least 15 minutes.
- Heat the vegetable oil in a clay pot or a heavy-bottomed pan over medium heat.
- Add the chopped shallots and minced garlic, sautéing until fragrant and golden brown.
- Carefully place the marinated fish in the pot, along with the marinade. If using, add the sliced chili pepper.
- Cover the pot and let it simmer on low heat for about 15 minutes, occasionally spooning the sauce over the fish.
- Once the fish is cooked through and the sauce has thickened, remove from heat.
- Garnish with chopped green onions before serving.
