Steps

  1. Heat the oil in a clay pot or a heavy-bottomed pan over medium heat.
  2. Add the minced garlic and sliced shallots, sautéing until fragrant and slightly golden.
  3. Add the catfish fillets to the pot, searing each side for about 2-3 minutes until lightly browned.
  4. Pour in the coconut aminos and fish sauce, then add the black pepper and sliced chili.
  5. Add the water and bring the mixture to a gentle simmer.
  6. Cover the pot and let it simmer for about 15-20 minutes until the fish is cooked through and the sauce has thickened.
  7. Garnish with chopped green onions before serving.
