  • Brown sugar - 1 tablespoon
  • Water - 150 ml
  • Garlic - 3 cloves, minced
  • Shallots - 2, sliced
  • Black pepper - 1 teaspoon
  • Chili pepper - 1, sliced (optional)
  • Vegetable oil - 1 tablespoon
  • Green onions - 2, chopped for garnish

Steps

  1. Heat the vegetable oil in a clay pot or a heavy skillet over medium heat.
  2. Add minced garlic and shallots, sautéing until fragrant and golden.
  3. Stir in the brown sugar until it melts and caramelizes slightly.
  4. Add the catfish fillet to the pot, gently turning to coat it in the caramel.
  5. Pour in the soy sauce, fish sauce, and water, bringing the mixture to a simmer.
  6. Season with black pepper and add sliced chili pepper if desired.
  7. Cover and cook on low heat for about 15-20 minutes, allowing the fish to absorb the flavors.
  8. Once cooked, sprinkle with chopped green onions and serve hot with steamed rice.
