Ingredients

  • Catfish fillets - 300 grams
  • Turmeric powder - 1 tablespoon
  • Fish sauce - 2 tablespoons
  • Brown sugar - 1 tablespoon
  • Shallots - 2, thinly sliced
  • Garlic - 2 cloves, minced
  • Black pepper - 1/2 teaspoon
  • Vegetable oil - 1 tablespoon
  • Coconut water - 200 ml
  • Fresh chili - 1, sliced (optional)
  • Cilantro - a handful, for garnish

Steps

  1. Marinate the catfish fillets with turmeric powder, fish sauce, black pepper, and brown sugar for at least 15 minutes.
  2. In a medium pot, heat the vegetable oil over medium heat and add the sliced shallots and minced garlic. Sauté until fragrant and golden brown.
  3. Add the marinated catfish to the pot and gently sear on both sides for about 3 minutes each.
  4. Pour in the coconut water, ensuring the fish is submerged. Bring to a boil, then reduce to a simmer.
  5. Cover and cook for 20 minutes, occasionally spooning the sauce over the fish.
  6. If using, add the sliced chili for heat during the last 5 minutes of cooking.
  7. Remove from heat and let it rest for a few minutes. Garnish with fresh cilantro before serving.
