- Catfish fillets - 300 grams
- Turmeric powder - 1 tablespoon
- Fish sauce - 2 tablespoons
- Brown sugar - 1 tablespoon
- Shallots - 2, thinly sliced
- Garlic - 2 cloves, minced
- Black pepper - 1/2 teaspoon
- Vegetable oil - 1 tablespoon
- Coconut water - 200 ml
- Fresh chili - 1, sliced (optional)
- Cilantro - a handful, for garnish
Steps
- Marinate the catfish fillets with turmeric powder, fish sauce, black pepper, and brown sugar for at least 15 minutes.
- In a medium pot, heat the vegetable oil over medium heat and add the sliced shallots and minced garlic. Sauté until fragrant and golden brown.
- Add the marinated catfish to the pot and gently sear on both sides for about 3 minutes each.
- Pour in the coconut water, ensuring the fish is submerged. Bring to a boil, then reduce to a simmer.
- Cover and cook for 20 minutes, occasionally spooning the sauce over the fish.
- If using, add the sliced chili for heat during the last 5 minutes of cooking.
- Remove from heat and let it rest for a few minutes. Garnish with fresh cilantro before serving.
