  • Fish sauce - 3 tablespoons
  • Soy sauce - 1 tablespoon
  • Sugar - 1 teaspoon
  • Black pepper - 1 teaspoon
  • Chili powder - 1/2 teaspoon
  • Vegetable oil - 2 tablespoons
  • Fresh herbs (mint, basil) - for garnish
  • Lime - 1, cut into wedges

Steps

  1. Clean the mudfish thoroughly and pat dry.
  2. In a large bowl, combine minced garlic, shallots, lemongrass, fish sauce, soy sauce, sugar, black pepper, chili powder, and vegetable oil to create the marinade.
  3. Add the mudfish to the marinade, ensuring it is well-coated. Cover and let it marinate for at least 15 minutes.
  4. Preheat the grill to medium heat.
  5. Place the marinated mudfish on the grill and cook for about 5-7 minutes on each side or until cooked through and slightly charred.
  6. Remove from the grill and let rest for a couple of minutes.
  7. Serve the grilled mudfish with fresh herbs and lime wedges on the side.
