- Black pepper - 1 teaspoon

- Vegetable oil - 2 tablespoons
- Fresh herbs (mint, basil) - for garnish
- Lime - 1, cut into wedges
Steps
- Clean the mudfish thoroughly and pat dry.
- In a large bowl, combine minced garlic, shallots, lemongrass, fish sauce, soy sauce, sugar, black pepper, chili powder, and vegetable oil to create the marinade.
- Add the mudfish to the marinade, ensuring it is well-coated. Cover and let it marinate for at least 15 minutes.
