Ingredients

  • Fresh white fish fillets (such as tilapia or snapper) - 300 grams
  • Coconut water - 250 ml
  • Garlic - 3 cloves, minced
  • Ginger - 1 inch, sliced thinly
  • Lemongrass - 1 stalk, bruised and cut into 2-inch pieces
  • Red chili - 1, sliced (optional)
  • Fresh cilantro - 10 grams, chopped
  • Green onions - 2, chopped
  • Fish sauce - 1 tablespoon
  • Lime - 1, juiced
  • Salt - 1/2 teaspoon
  • Black pepper - 1/2 teaspoon

Steps

  1. Prepare the fish fillets by rinsing them under cold water and patting them dry with paper towels.
  2. In a mixing bowl, combine the garlic, ginger, fish sauce, lime juice, salt, and black pepper. Mix well.
  3. Marinate the fish fillets in the mixture for about 15 minutes.
  4. Place the marinated fish on a heatproof plate. Scatter the lemongrass pieces and sliced chili (if using) over the fish.
  5. In a steamer pot, pour in the coconut water and bring it to a boil over medium heat.
  6. Once boiling, carefully place the plate with the fish into the steamer, cover, and steam for about 10-12 minutes, or until the fish is cooked through and flakes easily with a fork.
  7. Remove the plate from the steamer and garnish the fish with chopped cilantro and green onions before serving.
