Ingredients

  • Whole fish (such as tilapia or snapper) - 500 grams
  • Beer - 200 ml
  • Fresh ginger - 20 grams, sliced
  • Garlic - 3 cloves, minced
  • Lemongrass - 1 stalk, bruised and cut into pieces
  • Red chili - 1, sliced (optional)
  • Fresh coriander (cilantro) - 10 grams, for garnish
  • Fish sauce - 1 tablespoon
  • Lime - 1, juiced
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon

Steps

  1. Clean the fish thoroughly, removing scales and entrails. Pat it dry with a paper towel.
  2. In a bowl, mix the fish sauce, lime juice, salt, and black pepper. Rub this mixture all over the fish, including inside the cavity.
  3. Stuff the cavity of the fish with ginger slices, minced garlic, lemongrass pieces, and chili slices.
  4. Place the fish on a heatproof plate that fits into a steamer basket.
  5. Pour the beer over the fish, ensuring the plate collects the liquid.
  6. Prepare a steamer by boiling water in a pot. Once boiling, place the steamer basket over the pot, cover, and steam the fish for 20-25 minutes or until cooked through.
  7. Carefully remove the fish from the steamer and garnish with fresh coriander before serving.
