Ingredients

  • Salmon fillets - 300 grams
  • Banana leaves - 2 large pieces
  • Fresh dill - 10 grams
  • Fresh coriander - 10 grams
  • Lemongrass - 1 stalk, finely chopped
  • Garlic - 2 cloves, minced
  • Fish sauce - 2 tablespoons
  • Lime juice - 1 tablespoon
  • Honey - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Salt - 1/2 teaspoon
  • Olive oil - 1 tablespoon

Steps

  1. Preheat the grill to medium-high heat.
  2. In a bowl, mix the fish sauce, lime juice, honey, minced garlic, chopped lemongrass, black pepper, and salt.
  3. Add the salmon fillets to the marinade and coat well. Let them marinate for 15 minutes.
  4. While the salmon is marinating, prepare the banana leaves by briefly passing them over an open flame or dipping them in boiling water to make them pliable.
  5. Lay the banana leaves flat and place a salmon fillet in the center of each leaf. Top with fresh dill and coriander.
  6. Fold the banana leaves over the salmon to create a parcel and secure it with kitchen twine or toothpicks.
  7. Brush the outside of the banana leaf parcels with olive oil.
  8. Place the parcels on the grill and cook for 15-20 minutes, turning halfway through, until the salmon is cooked through.
  9. Remove from the grill, unwrap carefully, and serve immediately.
