- Salmon fillets - 300 grams
- Banana leaves - 2 large pieces
- Fresh dill - 10 grams
- Fresh coriander - 10 grams
- Lemongrass - 1 stalk, finely chopped
- Garlic - 2 cloves, minced
- Fish sauce - 2 tablespoons
- Lime juice - 1 tablespoon
- Honey - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Salt - 1/2 teaspoon
- Olive oil - 1 tablespoon
Steps
- Preheat the grill to medium-high heat.
- In a bowl, mix the fish sauce, lime juice, honey, minced garlic, chopped lemongrass, black pepper, and salt.
- Add the salmon fillets to the marinade and coat well. Let them marinate for 15 minutes.
- While the salmon is marinating, prepare the banana leaves by briefly passing them over an open flame or dipping them in boiling water to make them pliable.
- Lay the banana leaves flat and place a salmon fillet in the center of each leaf. Top with fresh dill and coriander.
- Fold the banana leaves over the salmon to create a parcel and secure it with kitchen twine or toothpicks.
- Brush the outside of the banana leaf parcels with olive oil.
- Place the parcels on the grill and cook for 15-20 minutes, turning halfway through, until the salmon is cooked through.
- Remove from the grill, unwrap carefully, and serve immediately.
