- Shallots - 2, finely chopped
- Lemongrass - 1 stalk, finely minced
- Fish sauce - 2 tablespoons
- Lime juice - 1 tablespoon
- Chili powder - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Cilantro - 2 tablespoons, chopped
- Olive oil - 1 tablespoon
- Salt - to taste
- Lime wedges - for serving
Steps
- Preheat your grill to medium-high heat.
- In a bowl, mix the minced garlic, chopped shallots, lemongrass, fish sauce, lime juice, chili powder, black pepper, and olive oil to create the marinade.
- Rinse the Cá Dứa fillets under cold water and pat them dry with paper towels.
- Place the fish fillets in the marinade, ensuring they are well-coated. Let them marinate for at least 15 minutes.
- Once marinated, season the fish with salt to taste.
- Place the fish on the grill and cook for about 5-7 minutes on each side, or until the fish flakes easily with a fork and has nice grill marks.
- Remove the fish from the grill and let it rest for a couple of minutes.
- Garnish with chopped cilantro and serve with lime wedges on the side.
