Ingredients

  • Cá Dứa (Pangasius fish) - 300 grams
  • Garlic - 3 cloves, minced
  • Shallots - 2, finely chopped
  • Lemongrass - 1 stalk, finely minced
  • Fish sauce - 2 tablespoons
  • Lime juice - 1 tablespoon
  • Chili powder - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Cilantro - 2 tablespoons, chopped
  • Olive oil - 1 tablespoon
  • Salt - to taste
  • Lime wedges - for serving

Steps

  1. Preheat your grill to medium-high heat.
  2. In a bowl, mix the minced garlic, chopped shallots, lemongrass, fish sauce, lime juice, chili powder, black pepper, and olive oil to create the marinade.
  3. Rinse the Cá Dứa fillets under cold water and pat them dry with paper towels.
  4. Place the fish fillets in the marinade, ensuring they are well-coated. Let them marinate for at least 15 minutes.
  5. Once marinated, season the fish with salt to taste.
  6. Place the fish on the grill and cook for about 5-7 minutes on each side, or until the fish flakes easily with a fork and has nice grill marks.
  7. Remove the fish from the grill and let it rest for a couple of minutes.
  8. Garnish with chopped cilantro and serve with lime wedges on the side.
