Ingredients

  • White fish fillets (such as tilapia or catfish) - 300 grams
  • Rice flour - 100 grams
  • Cornstarch - 50 grams
  • Egg - 1 large
  • Cold sparkling water - 150 ml
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Garlic powder - 1/2 teaspoon
  • Vegetable oil (for frying) - 500 ml
  • Lemon - 1 (for garnish)
  • Fresh cilantro - a handful (for garnish)
  • Chili sauce (for dipping) - to taste

Steps

  1. Rinse the fish fillets under cold water and pat them dry with paper towels. Cut the fillets into manageable pieces, about 5 cm wide.
  2. In a bowl, mix the rice flour, cornstarch, salt, black pepper, and garlic powder together.
  3. In another bowl, whisk the egg and then add the cold sparkling water, mixing well.
  4. Gradually add the dry ingredients to the wet mixture until you achieve a smooth batter.
  5. Heat the vegetable oil in a deep frying pan over medium-high heat until it reaches 180°C (350°F).
  6. Dip each piece of fish into the batter, allowing excess batter to drip off, and carefully place it into the hot oil.
  7. Fry the fish in batches for about 4-5 minutes on each side, or until golden brown and crispy. Remove and drain on paper towels.
  8. Serve the crispy fish garnished with lemon wedges and fresh cilantro, alongside chili sauce for dipping.
