- Rice flour - 100 grams
- Cornstarch - 50 grams
- Egg - 1 large
- Cold sparkling water - 150 ml
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Garlic powder - 1/2 teaspoon
- Vegetable oil (for frying) - 500 ml
- Lemon - 1 (for garnish)
- Fresh cilantro - a handful (for garnish)
- Chili sauce (for dipping) - to taste
Steps
- Rinse the fish fillets under cold water and pat them dry with paper towels. Cut the fillets into manageable pieces, about 5 cm wide.
- In a bowl, mix the rice flour, cornstarch, salt, black pepper, and garlic powder together.
- In another bowl, whisk the egg and then add the cold sparkling water, mixing well.
- Gradually add the dry ingredients to the wet mixture until you achieve a smooth batter.
- Heat the vegetable oil in a deep frying pan over medium-high heat until it reaches 180°C (350°F).
- Dip each piece of fish into the batter, allowing excess batter to drip off, and carefully place it into the hot oil.
- Fry the fish in batches for about 4-5 minutes on each side, or until golden brown and crispy. Remove and drain on paper towels.
- Serve the crispy fish garnished with lemon wedges and fresh cilantro, alongside chili sauce for dipping.
