- Carp fish - 400 grams, cleaned and scaled
- Lemongrass - 2 stalks, minced
- Garlic - 4 cloves, minced
- Shallots - 2, finely chopped
- Fish sauce - 3 tablespoons
- Soy sauce - 1 tablespoon
- Turmeric powder - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Brown sugar - 1 tablespoon
- Vegetable oil - 2 tablespoons
- Fresh coriander - 20 grams, chopped
- Mint leaves - 20 grams, chopped
- Lettuce leaves - 4, for serving
- Lime - 1, cut into wedges, for serving
Steps
- Preheat your grill to medium-high heat.
- In a bowl, combine minced lemongrass, garlic, shallots, fish sauce, soy sauce, turmeric powder, black pepper, brown sugar, and vegetable oil to create a marinade.
- Rub the marinade all over the cleaned carp, making sure to get it inside the cavity as well. Let it marinate for at least 20 minutes.
- While the fish is marinating, prepare your grilling area by oiling the grill grates to prevent sticking.
- Once marinated, place the carp on the grill. Cook for about 10-12 minutes on each side, or until the fish is cooked through and has nice grill marks.
- Remove the fish from the grill and let it rest for a few minutes.
- Serve the grilled carp on a platter, garnished with fresh coriander and mint leaves, alongside lettuce leaves and lime wedges for a refreshing accompaniment.
