Ingredients

  • Sea bass fillet - 300 grams
  • Fresh ginger - 10 grams, sliced
  • Garlic - 2 cloves, minced
  • Spring onions - 2 stalks, chopped
  • Cilantro - 10 grams, chopped
  • Lime - 1, juiced
  • Fish sauce - 30 ml
  • Black pepper - 1/2 teaspoon
  • Red chili - 1, sliced (optional)
  • Salt - to taste
  • Water - 1 cup (250 ml)

Steps

  1. Prepare the fish by rinsing the sea bass fillet under cold water and patting it dry with paper towels.
  2. In a bowl, combine the fish sauce, lime juice, minced garlic, black pepper, and a pinch of salt. Marinate the fish in this mixture for 10 minutes.
  3. While the fish is marinating, prepare the steamer. Fill a pot with 1 cup of water and bring it to a boil.
  4. Place the sliced ginger and half of the chopped spring onions on a heatproof plate, then lay the marinated fish on top.
  5. Sprinkle the remaining spring onions, sliced chili (if using), and chopped cilantro over the fish.
  6. Once the water is boiling, place the plate with the fish in the steamer basket and cover it. Steam the fish for about 15 minutes, or until it is cooked through and flakes easily with a fork.
  7. Carefully remove the plate from the steamer and let it cool for a minute before serving.
  8. Serve the Cá Chẽm Hấp hot, drizzled with any remaining juices and garnished with extra cilantro.
