Ingredients

  • Cobia fish fillets - 400 grams
  • Fish sauce - 3 tablespoons
  • Soy sauce - 1 tablespoon
  • Brown sugar - 2 tablespoons
  • Shallots - 2, thinly sliced
  • Garlic - 3 cloves, minced
  • Ginger - 1 tablespoon, grated
  • Red chili - 1, sliced (adjust to taste)
  • Black pepper - 1 teaspoon
  • Coconut water - 200 ml
  • Vegetable oil - 2 tablespoons
  • Green onions - 2, chopped
  • Fresh cilantro - for garnish

Steps

  1. Prepare the cobia fish fillets by rinsing them under cold water and patting dry with paper towels. Cut into serving pieces.
  2. In a bowl, combine fish sauce, soy sauce, brown sugar, black pepper, garlic, ginger, and sliced chili. Mix well.
  3. Heat vegetable oil in a clay pot or heavy skillet over medium heat. Add shallots and sauté until they are fragrant and translucent.
  4. Add the marinated cobia pieces to the pot, searing each side for about 2-3 minutes until lightly browned.
  5. Pour in the coconut water and bring to a boil. Reduce heat to low and cover the pot.
  6. Simmer for about 15-20 minutes until the fish is cooked through and the sauce has thickened slightly.
  7. Remove from heat and garnish with chopped green onions and fresh cilantro before serving.
