- Red chili - 1, sliced (adjust to taste)
- Black pepper - 1 teaspoon
- Coconut water - 200 ml
- Vegetable oil - 2 tablespoons
- Green onions - 2, chopped
- Fresh cilantro - for garnish
Steps
- Prepare the cobia fish fillets by rinsing them under cold water and patting dry with paper towels. Cut into serving pieces.
- In a bowl, combine fish sauce, soy sauce, brown sugar, black pepper, garlic, ginger, and sliced chili. Mix well.
- Heat vegetable oil in a clay pot or heavy skillet over medium heat. Add shallots and sauté until they are fragrant and translucent.
- Add the marinated cobia pieces to the pot, searing each side for about 2-3 minutes until lightly browned.
- Pour in the coconut water and bring to a boil. Reduce heat to low and cover the pot.
- Simmer for about 15-20 minutes until the fish is cooked through and the sauce has thickened slightly.
- Remove from heat and garnish with chopped green onions and fresh cilantro before serving.
