  • Black pepper - 1 teaspoon
  • Turmeric powder - 1 teaspoon
  • Vegetable oil - 2 tablespoons
  • Fresh coriander - 20 grams, chopped
  • Lime - 1, juiced
  • Green chili - 1, sliced (optional)
  • Rice noodles - 100 grams (for serving)
  • Lettuce leaves - 4 leaves (for serving)
  • Pickled vegetables - 100 grams (for serving)

Steps

  1. In a bowl, combine minced garlic, chopped shallots, minced lemongrass, fish sauce, sugar, black pepper, turmeric powder, and vegetable oil to create a marinade.
  2. Add the mackerel fillets to the marinade, ensuring they are well-coated. Let them marinate for at least 15 minutes.
  3. Preheat a grill or grill pan over medium-high heat. Once hot, place the marinated mackerel fillets on the grill.
  4. Grill the fish for about 4-5 minutes on each side, or until the fish is cooked through and has nice grill marks.
  5. While the fish is grilling, prepare the dipping sauce by mixing lime juice, sliced green chili, and chopped coriander in a small bowl.
  6. To serve, place the grilled mackerel on a plate with rice noodles, lettuce leaves, and pickled vegetables. Drizzle the dipping sauce over the fish.
