- Black pepper - 1/2 teaspoon
- Fresh coriander - 1/4 cup, chopped
- Fresh mint - 1/4 cup, chopped
- Vegetable oil - 1 tablespoon
- Salt - to taste
- Lettuce leaves - for serving
- Sliced cucumbers - for serving
- Vietnamese dipping sauce (Nước Chấm) - for serving
Steps
- In a bowl, combine the lemongrass, garlic, shallots, fish sauce, lime juice, brown sugar, black pepper, and vegetable oil. Mix well to create a marinade.
- Add the mackerel fillets to the marinade, ensuring they are well coated. Cover and marinate in the refrigerator for at least 15 minutes.
- Preheat the grill to medium-high heat.
- Remove the mackerel from the marinade and place it on the grill. Grill for about 5-7 minutes on each side or until the fish is cooked through and has grill marks.
- While the fish is grilling, prepare the Vietnamese dipping sauce by mixing fish sauce, lime juice, sugar, and water to taste.
- Once grilled, remove the fish from the grill and let it rest for a few minutes.
- Serve the grilled mackerel on a plate, garnished with fresh coriander and mint. Serve with lettuce leaves, sliced cucumbers, and the dipping sauce on the side.
