  • Brown sugar - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Fresh coriander - 1/4 cup, chopped
  • Fresh mint - 1/4 cup, chopped
  • Vegetable oil - 1 tablespoon
  • Salt - to taste
  • Lettuce leaves - for serving
  • Sliced cucumbers - for serving
  • Vietnamese dipping sauce (Nước Chấm) - for serving

Steps

  1. In a bowl, combine the lemongrass, garlic, shallots, fish sauce, lime juice, brown sugar, black pepper, and vegetable oil. Mix well to create a marinade.
  2. Add the mackerel fillets to the marinade, ensuring they are well coated. Cover and marinate in the refrigerator for at least 15 minutes.
  3. Preheat the grill to medium-high heat.
  4. Remove the mackerel from the marinade and place it on the grill. Grill for about 5-7 minutes on each side or until the fish is cooked through and has grill marks.
  5. While the fish is grilling, prepare the Vietnamese dipping sauce by mixing fish sauce, lime juice, sugar, and water to taste.
  6. Once grilled, remove the fish from the grill and let it rest for a few minutes.
  7. Serve the grilled mackerel on a plate, garnished with fresh coriander and mint. Serve with lettuce leaves, sliced cucumbers, and the dipping sauce on the side.
