Ingredients

  • White fish fillets (e.g., tilapia or cod) - 300 grams
  • Banana leaves - 2 large pieces
  • Garlic - 2 cloves, minced
  • Shallots - 2, thinly sliced
  • Fresh coriander (cilantro) - 30 grams, chopped
  • Lemongrass - 1 stalk, minced
  • Red chili - 1, sliced (adjust to taste)
  • Fish sauce - 2 tablespoons
  • Lime juice - 1 tablespoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Olive oil - 1 tablespoon
  • Cucumber - 1 small, sliced (for garnish)

Steps

  1. Preheat your grill or steamer to medium heat.
  2. In a bowl, mix the minced garlic, sliced shallots, chopped coriander, minced lemongrass, sliced red chili, fish sauce, lime juice, salt, and black pepper to create a marinade.
  3. Place the fish fillets in the marinade and let them sit for about 10 minutes to absorb the flavors.
  4. While the fish is marinating, prepare the banana leaves by briefly passing them over an open flame or boiling water to make them more pliable.
  5. Lay the banana leaves flat on a clean surface and divide the marinated fish evenly onto each leaf.
  6. Drizzle olive oil over the fish and fold the banana leaves to create a secure packet, ensuring the fish is completely enclosed.
  7. Place the packets on the grill or in the steamer and cook for 15-20 minutes or until the fish is cooked through and flaky.
  8. Carefully unwrap the banana leaf packets and serve the fish garnished with sliced cucumber.
