Ingredients
- White fish fillets (e.g., tilapia or cod) - 300 grams
- Banana leaves - 2 large pieces
- Garlic - 2 cloves, minced
- Shallots - 2, thinly sliced
- Fresh coriander (cilantro) - 30 grams, chopped
- Lemongrass - 1 stalk, minced
- Red chili - 1, sliced (adjust to taste)
- Fish sauce - 2 tablespoons
- Lime juice - 1 tablespoon
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Olive oil - 1 tablespoon
- Cucumber - 1 small, sliced (for garnish)
Steps
- Preheat your grill or steamer to medium heat.
- In a bowl, mix the minced garlic, sliced shallots, chopped coriander, minced lemongrass, sliced red chili, fish sauce, lime juice, salt, and black pepper to create a marinade.
- Place the fish fillets in the marinade and let them sit for about 10 minutes to absorb the flavors.
- While the fish is marinating, prepare the banana leaves by briefly passing them over an open flame or boiling water to make them more pliable.
- Lay the banana leaves flat on a clean surface and divide the marinated fish evenly onto each leaf.
- Drizzle olive oil over the fish and fold the banana leaves to create a secure packet, ensuring the fish is completely enclosed.
- Place the packets on the grill or in the steamer and cook for 15-20 minutes or until the fish is cooked through and flaky.
- Carefully unwrap the banana leaf packets and serve the fish garnished with sliced cucumber.
