- Rice vermicelli - 150 grams

- Soy sauce (kosher) - 2 tablespoons
- Brown sugar - 1 tablespoon
- Sesame oil - 1 tablespoon
- Lime juice - 1 tablespoon
- Carrot - 1, julienned
- Cucumber - 1, julienned
- Fresh cilantro - 20 grams, chopped
- Fresh mint - 20 grams, chopped
- Peanuts (unsalted) - 30 grams, crushed
- Chili sauce (kosher) - to taste
- Salt - to taste
- Pepper - to taste
Steps
- In a bowl, combine minced garlic, chopped shallots, soy sauce, brown sugar, sesame oil, lime juice, salt, and pepper to create a marinade.
- Slice the pork tenderloin into thin strips and add it to the marinade. Cover and refrigerate for at least 15 minutes.
- While the pork is marinating, prepare the rice vermicelli according to package instructions. Drain and set aside.
- In a grill pan or outdoor grill, cook the marinated pork over medium-high heat for about 10 minutes, turning occasionally, until cooked through and slightly charred.
- To assemble, place a bed of rice vermicelli in each bowl. Top with grilled pork, julienned carrot, cucumber, and a sprinkle of crushed peanuts.
- Garnish with chopped cilantro and mint. Drizzle with chili sauce if desired, and serve immediately.
