Ingredients
- Rice vermicelli noodles - 100 grams
- Firm tofu - 150 grams
- Crab meat (canned or fresh) - 100 grams
- Tomatoes - 2 medium, chopped
- Vegetable broth - 1 liter
- Fish sauce (kosher) - 2 tablespoons
- Garlic - 2 cloves, minced
- Shallots - 1 medium, sliced
- Green onions - 2, chopped
- Fresh cilantro - 1/2 cup, chopped
- Lime - 1, cut into wedges
- Bean sprouts - 100 grams
- Salt - to taste
- Pepper - to taste
Steps
- Prepare the rice vermicelli noodles according to package instructions. Drain and set aside.
- In a large pot, heat a tablespoon of oil over medium heat. Add minced garlic and sliced shallots, sautéing until fragrant.
- Add the chopped tomatoes to the pot and cook until softened, about 5 minutes.
- Pour in the vegetable broth and bring to a simmer. Stir in the fish sauce, salt, and pepper to taste.
- While the broth simmers, cut the tofu into small cubes and add them to the pot. Cook for an additional 5 minutes.
- In serving bowls, place a portion of the cooked rice vermicelli noodles. Ladle the hot broth and tofu mixture over the noodles.
- Top each bowl with crab meat, chopped green onions, fresh cilantro, and bean sprouts.
- Serve with lime wedges on the side for added flavor.
