Ingredients

  • Rice vermicelli noodles - 100 grams
  • Firm tofu - 150 grams
  • Crab meat (canned or fresh) - 100 grams
  • Tomatoes - 2 medium, chopped
  • Vegetable broth - 1 liter
  • Fish sauce (kosher) - 2 tablespoons
  • Garlic - 2 cloves, minced
  • Shallots - 1 medium, sliced
  • Green onions - 2, chopped
  • Fresh cilantro - 1/2 cup, chopped
  • Lime - 1, cut into wedges
  • Bean sprouts - 100 grams
  • Salt - to taste
  • Pepper - to taste

Steps

  1. Prepare the rice vermicelli noodles according to package instructions. Drain and set aside.
  2. In a large pot, heat a tablespoon of oil over medium heat. Add minced garlic and sliced shallots, sautéing until fragrant.
  3. Add the chopped tomatoes to the pot and cook until softened, about 5 minutes.
  4. Pour in the vegetable broth and bring to a simmer. Stir in the fish sauce, salt, and pepper to taste.
  5. While the broth simmers, cut the tofu into small cubes and add them to the pot. Cook for an additional 5 minutes.
  6. In serving bowls, place a portion of the cooked rice vermicelli noodles. Ladle the hot broth and tofu mixture over the noodles.
  7. Top each bowl with crab meat, chopped green onions, fresh cilantro, and bean sprouts.
  8. Serve with lime wedges on the side for added flavor.
