- Tomatoes - 400 grams, diced
- Vegetable broth - 1 liter
- Tofu - 150 grams, cubed
- Fish sauce (kosher) - 1 tablespoon
- Soy sauce (kosher) - 1 tablespoon
- Cilantro - 30 grams, chopped
- Mint leaves - 30 grams, chopped
- Bean sprouts - 100 grams
- Lime - 1, cut into wedges
- Chili peppers - 1, sliced (optional)
Steps
- Cook the rice noodles according to package instructions, then drain and set aside.
- In a large pot, heat olive oil over medium heat. Add minced garlic and chopped shallots, sauté until fragrant.
- Add diced tomatoes to the pot and cook until they soften, about 5-7 minutes.
- Pour in the vegetable broth and bring to a simmer. Add fish sauce and soy sauce, stirring well.
- Add cubed tofu to the broth and simmer for an additional 10 minutes to allow flavors to meld.
- Taste the broth and adjust seasoning if necessary, adding more fish sauce or soy sauce according to preference.
- To serve, divide the cooked rice noodles into two bowls, ladle the hot broth with tofu and tomatoes over the noodles.
- Garnish with chopped cilantro, mint leaves, and bean sprouts. Serve with lime wedges and sliced chili peppers on the side.
