Ingredients

  • Rice vermicelli noodles - 150 grams
  • Fresh water snails - 200 grams (cleaned and shelled)
  • Vegetable broth - 500 ml
  • Shallots - 2 (finely chopped)
  • Garlic - 2 cloves (minced)
  • Fresh ginger - 1 inch (sliced)
  • Lemongrass - 1 stalk (smashed and tied in a knot)
  • Fish sauce (kosher) - 2 tablespoons
  • Soy sauce (kosher) - 1 tablespoon
  • Sugar - 1 teaspoon
  • Fresh cilantro - 1/4 cup (chopped)
  • Fresh mint - 1/4 cup (chopped)
  • Bean sprouts - 100 grams
  • Lime - 1 (cut into wedges)
  • Chili peppers - 1 (sliced, optional for heat)

Steps

  1. In a pot, bring the vegetable broth to a simmer and add the smashed lemongrass, ginger, and half of the chopped shallots.
  2. Add the cleaned snails to the broth and simmer for about 10 minutes until cooked through.
  3. In a separate pan, heat a little oil and sauté the remaining shallots and minced garlic until fragrant.
  4. Add the cooked snails from the broth to the sauté pan along with fish sauce, soy sauce, and sugar, and stir-fry for 2-3 minutes.
  5. Meanwhile, cook the rice vermicelli noodles according to package instructions, then drain and set aside.
  6. Remove the lemongrass and ginger from the broth, then taste and adjust seasoning as needed.
  7. To serve, place a portion of the cooked noodles in a bowl, top with the sautéed snails, and ladle the hot broth over the top.
  8. Garnish with fresh cilantro, mint, bean sprouts, and lime wedges. Add sliced chili peppers if desired for heat.
