- Rice vermicelli noodles - 150 grams
- Snails (cooked and shelled) - 200 grams
- Vegetable broth - 500 ml
- Garlic - 3 cloves, minced
- Shallots - 2, finely chopped
- Cherry tomatoes - 100 grams, halved
- Cilantro - 30 grams, chopped
- Mint leaves - 20 grams, chopped
- Lime - 1, juiced
- Soy sauce (kosher) - 2 tablespoons
- Fish sauce (kosher) - 1 tablespoon
- Chili sauce - 1 teaspoon
- Vegetable oil - 2 tablespoons
- Salt - to taste
- Black pepper - to taste
Steps
- Cook the rice vermicelli noodles according to package instructions, then drain and rinse under cold water. Set aside.
- In a pot, heat the vegetable oil over medium heat. Add the minced garlic and chopped shallots, sautéing until fragrant and golden.
- Pour in the vegetable broth and bring to a simmer. Add the cooked snails, cherry tomatoes, soy sauce, fish sauce, chili sauce, salt, and pepper. Let it simmer for about 10 minutes.
- Once the broth is flavorful, remove from heat and stir in lime juice.
- To serve, place the cooked vermicelli noodles in bowls, ladle the hot broth and snails over the noodles, and top with chopped cilantro and mint leaves.
