Ingredients

  • Rice vermicelli noodles - 150 grams
  • Snails (cooked and shelled) - 200 grams
  • Vegetable broth - 500 ml
  • Garlic - 3 cloves, minced
  • Shallots - 2, finely chopped
  • Cherry tomatoes - 100 grams, halved
  • Cilantro - 30 grams, chopped
  • Mint leaves - 20 grams, chopped
  • Lime - 1, juiced
  • Soy sauce (kosher) - 2 tablespoons
  • Fish sauce (kosher) - 1 tablespoon
  • Chili sauce - 1 teaspoon
  • Vegetable oil - 2 tablespoons
  • Salt - to taste
  • Black pepper - to taste

Steps

  1. Cook the rice vermicelli noodles according to package instructions, then drain and rinse under cold water. Set aside.
  2. In a pot, heat the vegetable oil over medium heat. Add the minced garlic and chopped shallots, sautéing until fragrant and golden.
  3. Pour in the vegetable broth and bring to a simmer. Add the cooked snails, cherry tomatoes, soy sauce, fish sauce, chili sauce, salt, and pepper. Let it simmer for about 10 minutes.
  4. Once the broth is flavorful, remove from heat and stir in lime juice.
  5. To serve, place the cooked vermicelli noodles in bowls, ladle the hot broth and snails over the noodles, and top with chopped cilantro and mint leaves.
