Ingredients

  • Ground beef - 200 grams
  • Ground turkey - 200 grams
  • Garlic, minced - 2 cloves
  • Shallots, minced - 1 small
  • Fish sauce (kosher) - 2 tablespoons
  • Brown sugar - 1 tablespoon
  • Black pepper - 1 teaspoon
  • Rice vermicelli - 150 grams
  • Carrot, julienned - 1 medium
  • Cucumber, julienned - 1 medium
  • Fresh mint leaves - 1/2 cup
  • Fresh cilantro - 1/2 cup
  • Lime juice - 2 tablespoons
  • Soy sauce (kosher) - 3 tablespoons
  • Water - 1 cup

Steps

  1. In a bowl, combine ground beef, ground turkey, minced garlic, minced shallots, fish sauce, brown sugar, and black pepper. Mix well and form into small meatballs.
  2. Preheat a grill or grill pan over medium-high heat. Grill the meatballs for about 10-12 minutes, turning occasionally until fully cooked and charred.
  3. Meanwhile, cook the rice vermicelli according to package instructions. Drain and rinse under cold water.
  4. In a small bowl, mix the soy sauce, lime juice, and water to create the dipping sauce.
  5. To serve, place a portion of rice vermicelli in a bowl, top with grilled meatballs, and garnish with julienned carrot, cucumber, fresh mint, and cilantro.
  6. Serve with the dipping sauce on the side.
