- Ground beef - 200 grams
- Ground turkey - 200 grams
- Garlic, minced - 2 cloves
- Shallots, minced - 1 small
- Fish sauce (kosher) - 2 tablespoons
- Brown sugar - 1 tablespoon
- Black pepper - 1 teaspoon
- Rice vermicelli - 150 grams
- Carrot, julienned - 1 medium
- Cucumber, julienned - 1 medium
- Fresh mint leaves - 1/2 cup
- Fresh cilantro - 1/2 cup
- Lime juice - 2 tablespoons
- Soy sauce (kosher) - 3 tablespoons
- Water - 1 cup
Steps
- In a bowl, combine ground beef, ground turkey, minced garlic, minced shallots, fish sauce, brown sugar, and black pepper. Mix well and form into small meatballs.
- Preheat a grill or grill pan over medium-high heat. Grill the meatballs for about 10-12 minutes, turning occasionally until fully cooked and charred.
- Meanwhile, cook the rice vermicelli according to package instructions. Drain and rinse under cold water.
- In a small bowl, mix the soy sauce, lime juice, and water to create the dipping sauce.
- To serve, place a portion of rice vermicelli in a bowl, top with grilled meatballs, and garnish with julienned carrot, cucumber, fresh mint, and cilantro.
- Serve with the dipping sauce on the side.
