- Rice vermicelli noodles - 200 grams

- Shiitake mushrooms - 100 grams, sliced
- Tofu - 150 grams, cubed
- Carrot - 1 medium, julienned
- Daikon radish - 100 grams, julienned
- Red chili - 1, sliced (adjust to taste)
- Garlic - 3 cloves, minced
- Shallots - 2, thinly sliced
- Fresh cilantro - 30 grams, chopped
- Green onions - 2, sliced
- Lime - 1, cut into wedges
- Soy sauce - 2 tablespoons
- Vegetable oil - 1 tablespoon
- Salt - to taste
- Black pepper - to taste
Steps
- In a pot, heat vegetable oil over medium heat. Add shallots and garlic, sautéing until fragrant.
- Add the bruised lemongrass, sliced shiitake mushrooms, carrot, and daikon radish. Stir-fry for about 5 minutes until vegetables begin to soften.
- Pour in the vegetable broth and bring to a boil. Reduce heat and let it simmer for 10 minutes, allowing the flavors to meld.
- In a separate pot, cook the rice vermicelli noodles according to package instructions, then drain and set aside.
- After the broth has simmered, add cubed tofu, soy sauce, sliced red chili, salt, and pepper to taste. Simmer for an additional 5 minutes.
- To serve, place a portion of cooked vermicelli noodles in bowls. Ladle the hot broth with vegetables and tofu over the noodles.
- Garnish with fresh cilantro and green onions. Serve with lime wedges on the side for added flavor.
