  • Rice vermicelli noodles - 200 grams
  • Vegetable broth - 1 liter
  • Lemongrass stalks - 2, bruised and chopped
  • Shiitake mushrooms - 100 grams, sliced
  • Tofu - 150 grams, cubed
  • Carrot - 1 medium, julienned
  • Daikon radish - 100 grams, julienned
  • Red chili - 1, sliced (adjust to taste)
  • Garlic - 3 cloves, minced
  • Shallots - 2, thinly sliced
  • Fresh cilantro - 30 grams, chopped
  • Green onions - 2, sliced
  • Lime - 1, cut into wedges
  • Soy sauce - 2 tablespoons
  • Vegetable oil - 1 tablespoon
  • Salt - to taste
  • Black pepper - to taste

Steps

  1. In a pot, heat vegetable oil over medium heat. Add shallots and garlic, sautéing until fragrant.
  2. Add the bruised lemongrass, sliced shiitake mushrooms, carrot, and daikon radish. Stir-fry for about 5 minutes until vegetables begin to soften.
  3. Pour in the vegetable broth and bring to a boil. Reduce heat and let it simmer for 10 minutes, allowing the flavors to meld.
  4. In a separate pot, cook the rice vermicelli noodles according to package instructions, then drain and set aside.
  5. After the broth has simmered, add cubed tofu, soy sauce, sliced red chili, salt, and pepper to taste. Simmer for an additional 5 minutes.
  6. To serve, place a portion of cooked vermicelli noodles in bowls. Ladle the hot broth with vegetables and tofu over the noodles.
  7. Garnish with fresh cilantro and green onions. Serve with lime wedges on the side for added flavor.
