Ingredients

  • Rice noodles - 200 grams
  • Beef shank - 200 grams
  • Beef brisket - 100 grams
  • Water - 1.5 liters
  • Onion - 1 medium, halved
  • Lemongrass - 2 stalks, bruised
  • Fish sauce (kosher) - 3 tablespoons
  • Chili powder - 1 teaspoon
  • Ginger - 1 inch, sliced
  • Salt - to taste
  • Fresh herbs (Thai basil, cilantro) - for garnish
  • Lime - 1, cut into wedges
  • Bean sprouts - 100 grams

Steps

  1. In a large pot, combine the beef shank, beef brisket, halved onion, bruised lemongrass, sliced ginger, and water. Bring to a boil over high heat.
  2. Once boiling, reduce to a simmer and cook for about 30 minutes, skimming off any foam that rises to the surface.
  3. After 30 minutes, add fish sauce, chili powder, and salt to taste. Simmer for an additional 15 minutes until the beef is tender.
  4. Remove the beef from the pot and let it cool slightly. Slice the beef into thin pieces.
  5. Meanwhile, cook the rice noodles according to package instructions. Drain and set aside.
  6. To serve, place a portion of noodles in each bowl, top with sliced beef, and ladle the hot broth over the top.
  7. Garnish with fresh herbs, bean sprouts, and lime wedges. Serve immediately.
