- Rice noodles - 200 grams
- Beef shank - 200 grams
- Beef brisket - 100 grams
- Water - 1.5 liters
- Onion - 1 medium, halved
- Lemongrass - 2 stalks, bruised
- Fish sauce (kosher) - 3 tablespoons
- Chili powder - 1 teaspoon
- Ginger - 1 inch, sliced
- Salt - to taste
- Fresh herbs (Thai basil, cilantro) - for garnish
- Lime - 1, cut into wedges
- Bean sprouts - 100 grams
Steps
- In a large pot, combine the beef shank, beef brisket, halved onion, bruised lemongrass, sliced ginger, and water. Bring to a boil over high heat.
- Once boiling, reduce to a simmer and cook for about 30 minutes, skimming off any foam that rises to the surface.
- After 30 minutes, add fish sauce, chili powder, and salt to taste. Simmer for an additional 15 minutes until the beef is tender.
- Remove the beef from the pot and let it cool slightly. Slice the beef into thin pieces.
- Meanwhile, cook the rice noodles according to package instructions. Drain and set aside.
- To serve, place a portion of noodles in each bowl, top with sliced beef, and ladle the hot broth over the top.
- Garnish with fresh herbs, bean sprouts, and lime wedges. Serve immediately.
