- Vegetable oil - 2 tablespoons

- Fresh cilantro - for garnish
Steps
- Heat the vegetable oil in a large pot over medium heat. Add the chopped onion, minced garlic, and ginger, and sauté until fragrant and translucent, about 3-5 minutes.
- Add the beef cubes to the pot, browning them on all sides for about 8-10 minutes.
- Stir in the sliced carrots, cinnamon stick, and star anise, cooking for an additional 2-3 minutes.
- Pour in the beef broth, soy sauce, and fish sauce. Bring the mixture to a boil, then reduce the heat to low and cover the pot.
- Simmer for about 1.5 hours, or until the beef is tender and the flavors have melded. Stir occasionally and add water if necessary to keep the stew from drying out.
- Season with salt and black pepper to taste before serving.
- Serve hot, garnished with fresh cilantro, alongside crusty bread or rice noodles.
