  • Star anise - 2
  • Beef broth - 500 ml (ensure kosher)
  • Soy sauce - 2 tablespoons (kosher)
  • Fish sauce - 1 tablespoon (ensure kosher)
  • Vegetable oil - 2 tablespoons
  • Salt - to taste
  • Black pepper - to taste
  • Fresh cilantro - for garnish

Steps

  1. Heat the vegetable oil in a large pot over medium heat. Add the chopped onion, minced garlic, and ginger, and sauté until fragrant and translucent, about 3-5 minutes.
  2. Add the beef cubes to the pot, browning them on all sides for about 8-10 minutes.
  3. Stir in the sliced carrots, cinnamon stick, and star anise, cooking for an additional 2-3 minutes.
  4. Pour in the beef broth, soy sauce, and fish sauce. Bring the mixture to a boil, then reduce the heat to low and cover the pot.
  5. Simmer for about 1.5 hours, or until the beef is tender and the flavors have melded. Stir occasionally and add water if necessary to keep the stew from drying out.
  6. Season with salt and black pepper to taste before serving.
  7. Serve hot, garnished with fresh cilantro, alongside crusty bread or rice noodles.
