Ingredients
- Rice paper - 4 sheets
- Tofu - 150 grams, firm, diced
- Mushrooms - 100 grams, shiitake or button, sliced
- Carrot - 1 medium, grated
- Green onion - 2 stalks, chopped
- Fresh cilantro - 20 grams, chopped
- Peanut butter - 2 tablespoons
- Soy sauce - 2 tablespoons (ensure it’s kosher)
- Sesame oil - 1 tablespoon
- Chili sauce - 1 teaspoon (optional)
- Lime - 1, juiced
- Water - 200 ml
Steps
- In a bowl, mix the diced tofu, sliced mushrooms, grated carrot, chopped green onion, and cilantro.
- In a separate small bowl, combine peanut butter, soy sauce, sesame oil, lime juice, and chili sauce to create a dipping sauce.
- Heat a non-stick skillet over medium heat and add a splash of water. Soak each rice paper sheet in water for a few seconds until soft, then place it on a clean surface.
- Place a portion of the tofu and vegetable mixture in the center of each rice paper sheet, fold the sides over, and roll tightly to form a wrap.
- In the same skillet, add a little oil and grill the rolls for 2-3 minutes on each side until golden and crispy.
- Serve the grilled Banh Trang Nuong with the dipping sauce on the side.
