- Sesame seeds - 1 tablespoon, toasted
- Chili sauce (optional) - to taste
Steps
- In a pan over medium heat, add the vegetable oil and sauté the sliced mushrooms until they are tender, about 5 minutes.
- Add the julienned carrot and sliced bell pepper to the pan and cook for another 3-4 minutes until slightly softened.
- Stir in the soy sauce and chopped green onion, cooking for an additional 2 minutes. Remove from heat and set aside.
- Preheat a grill or grill pan over medium heat.
- Soak each rice paper sheet in warm water for about 5 seconds to soften, then lay them flat on a clean surface.
- Evenly distribute the sautéed vegetable mixture onto the rice paper sheets, then sprinkle with fresh cilantro and toasted sesame seeds.
- Carefully fold the rice paper over the filling, creating a closed pocket.
- Place the filled rice paper on the grill and cook for about 2-3 minutes on each side, until slightly crispy and golden brown.
- Remove from the grill, slice in half if desired, and serve with chili sauce on the side for dipping.
