- Fresh mint leaves - 20 grams
- Fresh cilantro leaves - 20 grams
- Lettuce leaves - 4 large
- Peanut butter - 2 tablespoons
- Soy sauce (kosher) - 1 tablespoon
- Lime juice - 1 tablespoon
- Honey - 1 teaspoon
- Sesame oil - 1 teaspoon
Steps
- Prepare the ingredients by julienning the carrot and cucumber, shredding the cooked chicken, and washing the mint and cilantro leaves.
- In a small bowl, mix the peanut butter, soy sauce, lime juice, honey, and sesame oil to create a dipping sauce. Adjust the consistency with water if needed.
- Fill a shallow dish with warm water. Dip one rice paper sheet into the water for about 10 seconds until it softens, then lay it flat on a clean surface.
- Place a lettuce leaf on the lower third of the rice paper, followed by a small amount of shredded chicken, julienned carrot, cucumber, mint, and cilantro.
- Fold the sides of the rice paper over the filling, then roll it up tightly from the bottom to the top, creating a wrap. Repeat with the remaining ingredients.
- Serve the Banh Trang with the peanut dipping sauce on the side.
