Ingredients
- Baguette - 2 pieces
- Firm tofu - 200 grams
- Soy sauce - 2 tablespoons
- Sesame oil - 1 tablespoon
- Garlic - 2 cloves, minced
- Carrot - 1 medium, julienned
- Daikon radish - 100 grams, julienned
- Cucumber - 1 small, sliced
- Fresh cilantro - 1/4 cup, chopped
- Sriracha sauce - to taste
- Salt - to taste
- Black pepper - to taste
Steps
- Press the tofu for 15 minutes to remove excess moisture, then cut it into 1 cm thick slices.
- In a bowl, mix soy sauce, sesame oil, minced garlic, salt, and pepper. Marinate the tofu slices in this mixture for at least 10 minutes.
- While the tofu is marinating, prepare the pickled vegetables by mixing the julienned carrot and daikon radish with a pinch of salt and letting them sit for 10 minutes.
- After marinating, grill the tofu slices on a pan over medium heat for about 3-4 minutes on each side until golden brown.
- Slice the baguettes open lengthwise without cutting all the way through, creating a pocket for the fillings.
- Spread a thin layer of sriracha on the inside of the baguette, then layer in the grilled tofu, pickled vegetables, cucumber slices, and fresh cilantro.
- Close the baguette and serve immediately, or wrap in foil for a portable lunch.
