- Chicken thighs, boneless - 200 grams
- Chicken broth (Kosher) - 500 ml
- Tapioca noodles - 100 grams
- Carrot, sliced - 50 grams
- Mushrooms, sliced - 50 grams
- Green onions, chopped - 2 tablespoons
- Garlic, minced - 2 cloves
- Ginger, minced - 1 teaspoon
- Soy sauce (Kosher) - 2 tablespoons
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Lime, juiced - 1 tablespoon
- Fresh cilantro, chopped - 2 tablespoons
Steps
- In a pot, heat a tablespoon of oil over medium heat and sauté the minced garlic and ginger until fragrant.
- Add the chicken thighs to the pot and brown on all sides for about 5 minutes.
- Pour in the chicken broth and bring to a boil. Reduce heat and simmer for 10 minutes.
- Add the sliced carrots and mushrooms to the pot, cooking for an additional 5 minutes.
- Stir in the tapioca noodles and cook according to package instructions, usually about 5-7 minutes.
- Season the soup with soy sauce, salt, and black pepper. Adjust seasoning to taste.
- Remove from heat and stir in lime juice and chopped cilantro.
- Serve hot, garnished with green onions.
