- Tapioca flour - 150 grams
- Water - 120 milliliters
- Salt - 1/2 teaspoon
- Mushrooms (shiitake or similar) - 50 grams, diced
- Carrots - 50 grams, finely diced
- Tofu (firm) - 100 grams, crumbled
- Soy sauce (kosher) - 1 tablespoon
- Black pepper - 1/4 teaspoon
- Vegetable oil - for frying
- Fresh cilantro - for garnish
Steps
- In a mixing bowl, combine the tapioca flour and salt, then gradually add water to form a smooth dough.
- Cover the dough with a damp cloth and let it rest for 15 minutes.
- In a skillet, heat a little vegetable oil over medium heat, then sauté the diced mushrooms and carrots until soft, about 5-7 minutes.
- Add the crumbled tofu, soy sauce, and black pepper to the skillet, mixing well and cooking for another 3-5 minutes. Remove from heat and let the filling cool.
- Divide the dough into equal portions (about 20 grams each) and flatten each piece into a disc.
- Place a small amount of the filling in the center of each disc, then fold and pinch the edges to seal, forming a dumpling.
- Bring a pot of water to a gentle boil. Carefully drop the dumplings into the water and cook for about 5-7 minutes, or until they float to the surface.
- Using a slotted spoon, remove the dumplings and place them on a plate. Allow them to cool slightly.
- In a clean skillet, heat a little vegetable oil and pan-fry the dumplings until golden brown on both sides.
- Serve warm, garnished with fresh cilantro.
