Ingredients

  • Tapioca flour - 150 grams
  • Water - 120 milliliters
  • Salt - 1/2 teaspoon
  • Mushrooms (shiitake or similar) - 50 grams, diced
  • Carrots - 50 grams, finely diced
  • Tofu (firm) - 100 grams, crumbled
  • Soy sauce (kosher) - 1 tablespoon
  • Black pepper - 1/4 teaspoon
  • Vegetable oil - for frying
  • Fresh cilantro - for garnish

Steps

  1. In a mixing bowl, combine the tapioca flour and salt, then gradually add water to form a smooth dough.
  2. Cover the dough with a damp cloth and let it rest for 15 minutes.
  3. In a skillet, heat a little vegetable oil over medium heat, then sauté the diced mushrooms and carrots until soft, about 5-7 minutes.
  4. Add the crumbled tofu, soy sauce, and black pepper to the skillet, mixing well and cooking for another 3-5 minutes. Remove from heat and let the filling cool.
  5. Divide the dough into equal portions (about 20 grams each) and flatten each piece into a disc.
  6. Place a small amount of the filling in the center of each disc, then fold and pinch the edges to seal, forming a dumpling.
  7. Bring a pot of water to a gentle boil. Carefully drop the dumplings into the water and cook for about 5-7 minutes, or until they float to the surface.
  8. Using a slotted spoon, remove the dumplings and place them on a plate. Allow them to cool slightly.
  9. In a clean skillet, heat a little vegetable oil and pan-fry the dumplings until golden brown on both sides.
  10. Serve warm, garnished with fresh cilantro.
