Ingredients

  • Rice flour - 100 grams
  • Water - 300 milliliters
  • Turmeric powder - 1 teaspoon
  • Salt - 1/2 teaspoon
  • Pork shoulder, thinly sliced - 150 grams
  • Shrimp, peeled and deveined - 100 grams
  • Garlic, minced - 2 cloves
  • Shallots, finely chopped - 1 medium
  • Bean sprouts - 100 grams
  • Green onions, chopped - 2 stalks
  • Lettuce leaves - 4 large
  • Fish sauce - 1 tablespoon
  • Cooking oil - 3 tablespoons
  • Lime wedges - for serving

Steps

  1. In a bowl, mix rice flour, turmeric powder, salt, and water until smooth to create the batter. Let it rest for 15 minutes.
  2. In a pan, heat 1 tablespoon of cooking oil over medium heat, add minced garlic and chopped shallots, and sauté until fragrant.
  3. Add sliced pork and shrimp to the pan, cook until pork is browned and shrimp turns pink, approximately 5-7 minutes. Add fish sauce and stir well.
  4. In a separate non-stick pan, heat 1 tablespoon of oil on medium-high heat. Pour a ladle of batter into the pan, swirling it to create a thin layer.
  5. Cook the pancake for about 2-3 minutes until the edges begin to crisp, then add a portion of the pork and shrimp mixture, bean sprouts, and green onions on one half of the pancake.
  6. Fold the pancake over and cook for an additional 2 minutes until golden brown. Repeat with the remaining batter and filling.
  7. Serve hot with lettuce leaves and lime wedges for wrapping.
