- Bean sprouts - 100 grams
- Green onions, chopped - 2 stalks
- Lettuce leaves - 4 large
- Fish sauce - 1 tablespoon
- Cooking oil - 3 tablespoons
- Lime wedges - for serving
Steps
- In a bowl, mix rice flour, turmeric powder, salt, and water until smooth to create the batter. Let it rest for 15 minutes.
- In a pan, heat 1 tablespoon of cooking oil over medium heat, add minced garlic and chopped shallots, and sauté until fragrant.
- Add sliced pork and shrimp to the pan, cook until pork is browned and shrimp turns pink, approximately 5-7 minutes. Add fish sauce and stir well.
- In a separate non-stick pan, heat 1 tablespoon of oil on medium-high heat. Pour a ladle of batter into the pan, swirling it to create a thin layer.
- Cook the pancake for about 2-3 minutes until the edges begin to crisp, then add a portion of the pork and shrimp mixture, bean sprouts, and green onions on one half of the pancake.
- Fold the pancake over and cook for an additional 2 minutes until golden brown. Repeat with the remaining batter and filling.
- Serve hot with lettuce leaves and lime wedges for wrapping.
