Ingredients

  • Rice flour - 100 grams
  • Turmeric powder - 1 teaspoon
  • Coconut milk - 200 ml
  • Water - 100 ml
  • Salt - 1/2 teaspoon
  • Shrimp, peeled and deveined - 200 grams
  • Bean sprouts - 100 grams
  • Green onions, chopped - 2 tablespoons
  • Vegetable oil - 2 tablespoons
  • Lettuce leaves - 4 pieces
  • Cilantro, fresh - 2 tablespoons
  • Mint leaves, fresh - 2 tablespoons
  • Lime wedges - 2 pieces
  • Fish sauce - 2 tablespoons

Steps

  1. In a mixing bowl, combine rice flour, turmeric powder, coconut milk, water, and salt. Whisk until smooth and let it rest for 15 minutes.
  2. Heat 1 tablespoon of vegetable oil in a non-stick skillet over medium heat. Add the shrimp and sauté until they turn pink, about 3-4 minutes. Remove and set aside.
  3. In the same skillet, pour a ladle of the batter to create a thin pancake. Cook for 2-3 minutes until the edges start to crisp.
  4. Add a portion of cooked shrimp, a handful of bean sprouts, and some chopped green onions on one half of the pancake.
  5. Fold the pancake over to cover the filling and cook for another 2-3 minutes until golden brown and crispy.
  6. Repeat the process for the remaining batter and filling, adding more oil to the skillet as needed.
  7. Serve the Bánh Xèo wrapped in lettuce leaves, topped with fresh cilantro and mint. Squeeze lime juice over it and serve with fish sauce for dipping.
