Ingredients

  • Coconut flour - 100g
  • Eggs - 2 large
  • Turmeric powder - 1 tsp
  • Unsweetened coconut milk - 200ml
  • Pork belly, thinly sliced - 150g
  • Shiitake mushrooms, sliced - 50g
  • Bean sprouts - 50g
  • Green onions, chopped - 2 stalks
  • Fish sauce - 1 tbsp
  • Salt - to taste
  • Pepper - to taste
  • Coconut oil - for frying

Steps

  1. In a mixing bowl, combine coconut flour, eggs, turmeric powder, and coconut milk. Whisk until smooth and set aside to rest for 10 minutes.
  2. In a skillet, heat 1 tablespoon of coconut oil over medium heat. Add pork belly and cook until browned and crispy, about 5-7 minutes.
  3. Add sliced shiitake mushrooms and continue to sauté for another 3-4 minutes until the mushrooms are tender.
  4. Pour a ladle of the batter into the skillet, swirling to cover the bottom evenly. Cook for 2-3 minutes until the edges start to lift.
  5. Add a handful of bean sprouts and a sprinkle of green onions on one half of the pancake. Fold the pancake over and cook for an additional 2 minutes until crispy.
  6. Repeat the process with the remaining batter and filling ingredients.
  7. Serve hot with a drizzle of fish sauce and extra green onions on top.
