- Coconut flour - 100g
- Eggs - 2 large
- Turmeric powder - 1 tsp
- Unsweetened coconut milk - 200ml
- Pork belly, thinly sliced - 150g
- Shiitake mushrooms, sliced - 50g
- Bean sprouts - 50g
- Green onions, chopped - 2 stalks
- Fish sauce - 1 tbsp
- Salt - to taste
- Pepper - to taste
- Coconut oil - for frying
Steps
- In a mixing bowl, combine coconut flour, eggs, turmeric powder, and coconut milk. Whisk until smooth and set aside to rest for 10 minutes.
- In a skillet, heat 1 tablespoon of coconut oil over medium heat. Add pork belly and cook until browned and crispy, about 5-7 minutes.
- Add sliced shiitake mushrooms and continue to sauté for another 3-4 minutes until the mushrooms are tender.
- Pour a ladle of the batter into the skillet, swirling to cover the bottom evenly. Cook for 2-3 minutes until the edges start to lift.
- Add a handful of bean sprouts and a sprinkle of green onions on one half of the pancake. Fold the pancake over and cook for an additional 2 minutes until crispy.
- Repeat the process with the remaining batter and filling ingredients.
- Serve hot with a drizzle of fish sauce and extra green onions on top.
