- Coconut milk - 200ml
- Water - 150ml
- Salt - 1/2 tsp
- Shrimp, peeled and deveined - 150g
- Pork shoulder, thinly sliced - 150g
- Bean sprouts - 100g
- Green onions, chopped - 2 stalks
- Fresh herbs (mint, cilantro, basil) - 30g
- Lettuce leaves - 4 large leaves
- Fish sauce - 2 tbsp
- Lime, juiced - 1
- Chili, sliced - 1 small (optional)
Steps
- In a bowl, combine rice flour, turmeric powder, coconut milk, water, and salt to make the batter. Mix until smooth and set aside for 15 minutes.
- Preheat a grill or BBQ to medium-high heat.
- In a separate bowl, mix shrimp and pork with a pinch of salt and pepper. Set aside.
- Pour a ladle of batter onto the grill to form a pancake and cook for about 2 minutes until the edges start to lift.
- Add a portion of the shrimp and pork mixture, bean sprouts, and green onions on one half of the pancake. Fold the pancake over and grill for another 3-4 minutes until the meat is cooked through.
- Repeat the process for the remaining batter and filling.
- Serve the pancakes wrapped in lettuce leaves with fresh herbs on the side.
- Mix fish sauce, lime juice, and sliced chili to create a dipping sauce.
